Christophe Esperou has decided to focus on gastronomic and traditional dishes in order to meet the demands of his clientele. This chef defends the flavors of the land with generosity and inventiveness. Moreover, the plates, well garnished by the way, are served with a good Minervois wine and smiling attentions.
